Meet Chef Alberto Carvajal – The Heart Behind Every Dish

Chef Alberto Carvajal is more than a culinary expert; he’s a storyteller whose medium is food. Born and raised in a culture where meals are central to family life, his passion for cooking began at an early age. With over 20 years of experience in the food industry, Alberto has spent his
career exploring the depth of Mexican cuisine, mastering traditional techniques, and refining his ability to blend history with modern sensibility.

Alberto believes that every dish has a story and he takes pride in making sure that story is told with authenticity. From slow-cooked moles to sizzling carne asada, each dish is carefully crafted using time-honored recipes, locally sourced ingredients, and a commitment to excellence that can be tasted in every bite.

His leadership in the kitchen is driven by a desire to preserve Mexican culinary heritage while creating a space where guests feel welcomed, valued, and delighted.

Rosa's Influence – Sauces That Define the Menu

Behind many of our most celebrated dishes is the talent of Rosa, whose legendary moles and sauces have become the soul of our menu. Rosa’s experience in the kitchen is grounded in tradition—she brings knowledge passed down from mothers and grandmothers, transforming ingredients like dried chilies, nuts, spices, and chocolate into deep, complex sauces.

Her Mole Negro, rich with roasted chilies and dark chocolate, is a staple of Oaxaca and one of the most beloved items on our menu. Equally flavorful is her Mole Coloradito, a smoky and subtly sweet sauce that wraps the palate in warmth.

These sauces are not just accompaniments—they are the centerpieces of the meal, capturing the flavors of southern Mexico in each spoonful. They’re made the traditional way, with patience and precision, often taking hours to prepare from scratch.

Since our doors opened in La Mesa, our mission has remained the same: to provide guests with a taste of Mexico that is genuine, flavorful, and memorable.

The restaurant took a new turn in 2011, when Chef German Rojas assumed ownership from Tony Gomez. With more than two decades of culinary experience, German brought a renewed energy and a clear vision—to showcase the beauty and complexity of traditional Mexican food, with a special emphasis on the rich flavors of Guerrero and Oaxaca.

Known for its coastal seafood, hearty stews, and earthy flavors, Guerrero provides the foundation for many of our dishes. One highlight is the Pozole Rojo, a hominy-based stew traditionally served during celebrations, made with tender pork or chicken and garnished with shredded cabbage, radish, onion, and lime.

Another staple is Carne Asada, marinated in a blend of spices and grilled to perfection—offering a smoky, satisfying bite that pairs beautifully with fresh tortillas and homemade salsas.

Also originating from Guerrero is Chilate, a traditional drink made from cocoa, rice, and spices a perfect ending to a hearty meal.

Oaxaca, often called the “Land of the Seven Moles,” brings depth, variety, and complexity to our kitchen. In addition to mole negro and mole coloradito, our menu features:

● Tamales Oaxaqueños
Wrapped in banana leaves, these tamales are filled with mole and meat, then steamed until tender.

● Enchiladas de Mole
Rolled tortillas filled with chicken and topped with mole, crema, and queso fresco.

● Chilaquiles
Lightly fried tortilla chips simmered in green or red salsa, topped with eggs or shredded chicken for a comforting meal that’s both crunchy and saucy.

Oaxaca is also known for its rich indigenous influence, and that authenticity is reflected in every bite.
